According to current regulations, Iberian ham in Spain can carry four specific seals that reveal more about the ham’s category. The color of the seals helps consumers to identify, among other things, the breed and diet of the pig.
These regulations seek to differentiate the different types of ham and standardize the characteristics and quality of Iberian ham. The four main colors are red, green, black and white.
- Black: A black label indicates that this is a 100% Iberian acorn-fed ham. This means that both the mother and father pigs are 100% Iberian breed and the animal was fed on acorns and other natural resources. Black indicates higher quality, which usually results in a higher price.
- Red: A red label indicates that it is an acorn-fed Iberian ham. However, unlike the black seal, these pigs do not have to come from 100% Iberian pigs, but only from 50% or 75%. They were also fed on acorns and other natural resources.
- Green: A green label indicates that it is Iberian ham from cebo de campo. These can be 50%, 75% or even 100% Iberian breed pigs that were fed mainly on feed, natural pasture and also acorns.
- White: A white label indicates that it is an Iberian fattening ham. They can be 50%, 75% or 100% Iberian breed animals and were fed with cereal and legume feed.
What does the blue label on a ham indicate?
The truth is that the blue label on a ham has no specific or official meaning, since it does not represent any type of ham in current regulations. However, a blue label does indicate a few things in terms of the product’s characteristics.
In order to carry one of the four seals already explained, a ham has to meet a long list of requirements. One of the most important factors is weight. If a piece does not meet any of the requirements of the current regulations, it cannot receive a black, red, green or white seal. An alternative is putting a blue label on a ham.
However, a blue label does not automatically mean inferior quality. It simply indicates that the ham does not fit into any of the official labeling categories. Buying a ham with a blue seal can be a good option for several reasons.
It can be found on acorn-fed Iberian hams as well as on fattened Iberian hams, so there is a wide variety of breeds and flavors. In addition, blue label hams tend to have a slightly lower price. However, it can be difficult to find hams with a blue label, since there is a high demand and little supply.
