The César Nieto 75% Iberian Acorn-fed Ham has the guarantee of the D.O. Guijuelo seal, which guarantees all the intense flavor of 75% Iberian products with rigorously proven quality. Its characteristic color ranges from very dark purple to pinkish. It has a high proportion of external fat, precisely due to its genetic purity.
The high proportion of oleic acid in its fats makes it soft and light at the same time, a ham that “melts” in the mouth. It quickly transports its intense flavor and pleasant aromas to the palate. This organoleptic richness is the result of the 75% Iberian genetics, its long curing period of more than 36 months and its natural acorn feeding.
The 75% Iberian Bellot Ham D.O. Guijuelo is obtained from 75% Iberian pigs that feed exclusively on grass and acorns in total freedom in the pastures of Salamanca and Extremadura. Its elaboration, from the hind limbs of the animal, is totally traditional, using natural salt from the Salinas de Torrevieja. The unique microclimate of Guijuelo, and its more than 1,000 meters above sea level, allow us to use less salt in its production than in other areas. That is why our Iberian Acorn-fed Acorn-fed Ham has that sweet first impression in the mouth, characteristic of cured products from Guijuelo.
