At César Nieto, we have been working with products such as bellota ham (acorn-fed), cebo ham (grain-fed), lomo (loin), paleta de bellota (acorn-fed shoulder), paleta de cebo (grain-fed shoulder) and embutidos (cold meats) for over a century. We are the fifth generation of a family dedicated to preserving the essence of a unique product with the Guijuelo designation of origin.
We have successfully managed to integrate new technologies while continuing to draw on the age-old expertise of our ancestors along the way. In fact, we still uphold these values today, instilling them in our production processes as well as patience, artisanal know-how and respect for the product. Despite embracing the latest technological advancements, we continue to carry out certain processes by hand, such as salting, larding and trimming, to fully preserve the essence of our products and to offer our customers the highest level of quality.

Our online catalogue contains cebo ham (grain-fed), bellota (acorn-fed), boneless ham and sliced ham. We also offer shoulders, making a clear distinction between the cebo and bellota varieties.
Embutidos (cold meats) are another of our star products, which we also produce the traditional way using recipes concocted by our master artisans: lomo (loin), lomo de bellota, lomo de cebo, chorizo, salchichón de bellota (acorn-fed, Iberian spicy sausage), etc. Through gradual, traditional curing in our larders, which are over 100 years old, and by seasoning them with the finest spices, our embutidos strike the perfect balance between taste and aromas.
All these products, as well as our hams and pork loins, are divided into two categories: bellota (acorn-fed) and cebo (grain-fed). For products of the bellota variety, our pigs, who live peacefully on our pastures, consume an average of 6-10 kilos of the finest acorns during the fattening period, as well as other natural food sources such as grass. This allows us to produce unique meats with many different hints on the mouth and nose, leaving even the most exacting palates satisfied.
We also offer ham, shoulders and embutidos de cebo, made with meat from animals fed on grains, wheat, soya, maize and barley.
