At César Nieto we carry more than a hundred years working around products such as acorn-fed ham, fattened ham, pork loin, acorn-fed ham shoulder, fattened shoulder, cold meat… We are currently the fifth generation of the family dedicated to maintaining the essence of a unique product with the Guijuelo designation of origin.

In our journey we have been able to combine the incorporation of new technologies with the traditional know-how of our ancestors. We currently maintain these values and transfer them to our production processes, in which we maintain patience, craftsmanship and respect for the product. Although we have the latest technological advances, we continue to carry out some processes such as salting, buttering and trimming of our pieces by hand, in order to maintain the essence of our product and offer our customers the highest quality.

Our goal is to continue spreading happiness all over the world, that’s why we want our products to reach as many corners of the world as possible. For this reason we have created our online store, where we offer top quality products made with love and dedication in our facilities in Guijuelo (Salamanca).

In our online catalog you will find bait ham, acorn-fed ham, boneless and sliced bait ham, acorn-fed ham, boneless . Also pork shoulder, distinguishing in this case also between fattened pork shoulder and acorn-fed pork shoulder.

Cold meats are another of our star products and we also produce them from artisan wayfollowing the recipes elaborated by our masters: pork loin, acorn-fed pork loin, fattened pork loin,chorizo, acorn-fed salchichón… Its slow and artisan curing process in our centenary cellars and its seasoning with the best spices result in an impeccable balance of flavor and aroma.

All these products, such as ham or pork loin, are differentiated between acorn-fed and fattened pork. In the first case, our pigs, which live peacefully in our pastures, consume an average of 6 to 10 kilos of premium acorns during the fattening period, combined with other natural foods such as grass. In this way we obtain a unique meat with a flavor and aroma full of nuances, which leaves no palate indifferent.

We also have ham, shoulder ham and sausages made from the meat of animals fed on cereals, wheat, soybeans, corn and barley.
