This organoleptic richness is the result of the Iberian genetics, its long curing period of more than 24 months and its acorn-fed diet.
This Acorn-fed Ham Shoulder D.O. Guijuelo is obtained from selected crosses of the Iberian Pig, reaching 75% of Iberian breed. The pigs feed exclusively on grass and acorns in total freedom in the pastures of Salamanca and Extremadura. Its elaboration, from the front extremities of the animal, is totally traditional, using natural salt from the Salinas de Torrevieja. The unique microclimate of Guijuelo, and its more than 1,000 meters above sea level, allow less salt to be used in its production than in other areas. This gives the Acorn-fed Ham Shoulder 75% Iderian that sweet first impression in the mouth, characteristic of cured products from Guijuelo.
The César Nieto Acorn-fed Ham Shoulder 75% Iberian Race offers the guarantee of the D.O. Guijuelo seal, providing the same quality as the Iberian Acorn-fed Ham but with its own character. Its curing period is proportionally shorter, so its flavors and aromas are very intense, perhaps more so than those of the ham itself. The Iberian Acorn-fed Ham Shoulder has a range of different nuances, very much appreciated by the public.
