The secret is a fan-shaped muscle located next to the shoulder, between the bacon loin. It has a high fatty infiltration and the muscle fibers are very light in color. Weighs approximately 350 gr.
The Iberian secret, also called Iberian cross, is located behind the shoulder, where a large amount of infiltrated fat accumulates, which gives it a characteristic whitish color and an exceptional texture.
