Paleta de Bellota - 100% Iberian Breed - D.O. Guijuelo

César Nieto's 100% Iberian Bellota Shoulder offers the guarantee of the D.O. Guijuelo seal, providing the same quality as Iberian Acorn-fed Ham but with its own character. Its curing period is proportionally shorter, so its flavors and aromas are very intense, perhaps more so than those of the ham itself. Acorn-fed Ibérico Paleta de Bellota has a different range of nuances, much appreciated by the public.
The César Nieto D.O. Guijuelo Acorn-fed Ibérico Paleta de Bellota Ibérica offers all the intense flavor of Iberian products. The high proportion of oleic acid in its fat makes it soft and light at the same time, it "melts" in the mouth, quickly transporting its intense flavor and pleasant aromas to the palate. This organoleptic richness is the result of the Iberian genetics, its long curing period of more than 24 months and its acorn-fed diet. This Paleta de Bellota D.O. Guijuelo is obtained from selected crosses of the Iberian Pig, reaching a 100% Iberian breed. The pigs feed exclusively on grass and acorns in total freedom in the pastures of Salamanca and Extremadura. Its elaboration, from the forelimbs of the animal, is totally traditional, using natural salt from the Salinas de Torrevieja. The unique microclimate of Guijuelo, and its more than a thousand meters above sea level, allow less salt to be used in its production than in other areas. This gives the Paleta de Bellota 100% Ibérico that sweet first impression in the mouth, characteristic of cured products from Guijuelo.
