The fat and oleic acid content of this year’s acorns was higher than in previous years. The flavor notes that come from the consumption of the oak fruit are combined with an enormous range of organoleptic nuances, thanks to its progressive enrichment with more than 36 months of aging.

This richness is the result of its long curing process and its natural diet based on acorns. This Acorn-fed Ham Shoulder D.O. Guijuelo is obtained from selected crosses of the Iberian Pig, reaching 75% of Iberian breed. The pigs feed exclusively on grass and acorns in total freedom in the pastures of Salamanca and Extremadura. Its elaboration, from the front extremities of the animal, is totally traditional, using natural salt from the Salinas de Torrevieja. The unique microclimate of Guijuelo, and its more than 1,000 meters above sea level, allow less salt to be used in its production than in other areas. This gives the Acorn-fed Ham Shoulder 75% Iderian that sweet first impression in the mouth, characteristic of cured products from Guijuelo.
