The César Nieto 75% Iberian Acorn-fed Ham offers all the intense flavor of Iberian products, with the quality rigorously verified by our Denomination of Origin, guaranteed by the D.O. Guijuelo seal. Its characteristic color, which ranges from very dark purple to pinkish, is precisely the result of its genetic purity.
The high proportion of external fat gives it a high oleic acid content, which makes it soft and light, it “melts” in the mouth. This ham quickly transports its intense flavor and pleasant aromas to the palate. Its organoleptic richness is the result of its 100% Iberian genetics, its long curing period of more than 36 months, and its natural diet based on acorns.
Acorn-fed Ham D.O. Guijuelo 75% Iberian is obtained from Iberian breed pigs that feed exclusively on grass and acorns, in total freedom in the pastures of Salamanca and Extremadura. Its preparation from the hind limbs of the animal is totally traditional, using natural salt from the Salinas de Torrevieja. The unique microclimate of Guijuelo, and its more than 1,000 meters above sea level, allow us to use less salt in its production than in other areas. That is why our Iberian Acorn-fed Ham has that sweet first impression in the mouth, characteristic of cured products from Guijuelo.
