DESCRIPTION
Iberian Acorn-fed Salchichón – Whole and halves

César Nieto’s Cular Acorn-fed Salchichón is made with a special selection of meats, which are less lean than in the Chorizo, and which are minced with a smaller caliber. This selection of meats enhances its flavor and differentiates it from other traditional sausages. Another of its notable attributes is that its marinade does not contain paprika but white wine, which gives it a very special and characteristic flavor.
This Cular Acorn-fed Salchichón is obtained from meat from animals with 50% of the Iberian breed in their genetics. Our herds feed exclusively on grass and acorns in total freedom in the pastures of Salamanca and Extremadura. The unique microclimate of Guijuelo and its more than a thousand meters above sea level, are the factors that have made our drying rooms and cellars of Guijuelo the ideal place for its slow maturation of almost 5 months.
Acorn-fed Iberian pork meat and fat, salt, peppercorns, dextrin, lactose, milk protein, soy protein, sugar, spices, wine (may contain sulfites), antioxidants (E-331 iii and E-301), preservatives (E-252, E-250) and coloring (E-120). Natural casing (pork rind).
